Meal Planning with Half a Cow
You've got 200+ lbs of beef in the freezer. Now what? Here's how to eat through it without getting bored.

Tom has been buying half and whole cows from local farms for his own family since 2009. He spent 15 years working with small-scale cattle operations and now helps families find and evaluate farm-direct beef suppliers through Half a Cow Club's directory of 1,200+ producers.
The System
Rotate by cooking method, not just by cut. Your freezer has four categories — steaks (grill/pan), roasts (slow-cook), ground beef (everything), and specialty cuts (smoke/braise). Cycle through one category per week and you'll never feel repetitive. Most families use 4-6 lbs per week and a half cow lasts 10-12 months.
Your Freezer Inventory at a Glance
Before you plan meals, know what you're working with. A typical half cow yields about 220 lbs broken into four categories:
Steaks (~45 lbs)
8-12 ribeyes, 8-12 strips, 4-6 sirloins, filets, flank
~1 steak dinner/week = 10-12 months
Roasts (~40 lbs)
5-7 roasts (chuck, rump, arm, sirloin tip)
~1 roast every 2 weeks = 10-14 months
Ground Beef (~100 lbs)
80-100 individual 1-lb packs
~2-3 lbs/week = 8-12 months
Specialty (~35 lbs)
Brisket, short ribs, stew meat, bones, organs
Weekend projects and slow-cook days
The 4-Week Rotation
This rotation ensures variety and uses each cut category at the right pace. Adjust based on your family's preferences.
Week 1: Steak Week
Mon: Pan-seared ribeye with roasted vegetables
Wed: Fajitas with flank or skirt steak
Fri: Grilled NY strip with baked potatoes
Thaw steaks in the fridge overnight. Pull from freezer Sunday night for Monday dinner.
Week 2: Roast Week
Sat/Sun: Slow-cook a chuck roast (feeds 4-6, leftovers for Mon-Tue)
Mon: Leftover roast beef sandwiches or tacos
Wed: Ground beef stir-fry or pasta
Move roast from freezer to fridge Thursday for Saturday cook. One roast = 2-3 meals.
Week 3: Ground Beef Week
Sun prep: Brown 3 lbs of ground beef for the week
Mon: Tacos or burrito bowls
Wed: Spaghetti bolognese
Fri: Homemade burgers on the grill
Batch cooking works great with ground beef — brown it all at once, then reheat portions.
Week 4: Specialty Week
Sat: Braised short ribs (start morning, eat dinner)
Tue: Beef stew from stew meat
Thu: Ground beef chili (great for batch-cooking)
Specialty cuts reward patience. Low and slow = incredible flavor from inexpensive cuts.
The Ground Beef Master Plan (You Have 100 lbs of It)
Ground beef is 40-50% of your half cow. The key to not getting sick of it: variety in preparation, not just recipes. See our ground beef recipe collection for detailed recipes.
| Category | Meals | Lbs/Month |
|---|---|---|
| Mexican | Tacos, burritos, enchiladas, quesadillas, nachos | 3-4 lbs |
| Italian | Bolognese, meatballs, lasagna, stuffed shells | 3-4 lbs |
| American | Burgers, meatloaf, sloppy joes, chili dogs | 2-3 lbs |
| Asian | Beef stir-fry, lettuce wraps, Korean beef bowls | 2-3 lbs |
| Comfort | Shepherd's pie, stuffed peppers, chili, soups | 2-3 lbs |
Pro tip: Ask your processor to turn some ground beef into pre-formed patties (saves time on grill nights) and season some as taco meat or breakfast sausage for built-in variety.
Thawing Strategy That Actually Works
The #1 reason people don't cook their bulk beef is forgetting to thaw it. Build thawing into your weekly routine:
Sunday Night Ritual
Every Sunday, pull 3 items from the freezer and put them in the fridge: Monday's protein, Wednesday's protein, and Friday's protein. By the time you cook them, they're thawed.
Forgot to thaw? Cold water method
Submerge sealed packages in cold water, changing water every 30 minutes. A 1 lb pack of ground beef thaws in about 1 hour. Steaks take 1-2 hours. Cook immediately after thawing.
Ground beef flat-pack trick
If you flatten your 1 lb ground beef packs before freezing (press them flat in the bag), they thaw in 20-30 minutes in cold water. This single trick makes ground beef as convenient as fresh.
How Long Will It Actually Last?
| Your Household | Beef Meals/Week | Half Cow Lasts | Better Size? |
|---|---|---|---|
| Single person | 2-3 | 24+ months | Quarter cow |
| Couple | 2-3 | 18-24 months | Quarter cow |
| Family of 3-4 | 3-4 | 10-12 months | Half cow (ideal) |
| Family of 5-6 | 4-5 | 6-8 months | Half cow (order 2x/year) |
| Large family / entertainers | 5+ | 4-6 months | Whole cow or 2 halves/year |
Use our servings calculator for a personalized estimate. Remember: vacuum-sealed beef maintains quality for 12-18 months, so don't order more than you'll eat in that window. See our freezer storage guide for shelf life details.

Frequently Asked Questions
How long does half a cow last a family of 4?
For a family of 4 eating beef 3-4 times per week (about 5 lbs/week), a half cow (200-250 lbs) lasts 10-12 months. If you eat beef less often (1-2 times per week), it could last 18+ months — though freezer quality starts declining after 12 months.
How do I avoid getting bored with the same cuts?
Rotate by cooking method, not just by cut. Week 1: grill steaks. Week 2: slow-cooker roast. Week 3: ground beef tacos. Week 4: stew meat stir-fry. The variety comes from preparation, not just the cut. Ground beef alone can become burgers, meatballs, bolognese, chili, stuffed peppers, tacos, and shepherd's pie.
What should I cook first from my half cow?
Start with the cuts you know: steaks on the grill, ground beef for burgers or tacos. Save the roasts and specialty cuts (brisket, short ribs) for weekends when you have more time. Don't let unfamiliar cuts intimidate you — a chuck roast in a slow cooker is almost impossible to mess up.
How much ground beef is too much?
A half cow comes with 80-120 lbs of ground beef — that's 80-120 individual 1-lb packs. At 2-3 lbs per week, that's 40-60 weeks of ground beef meals. If this sounds like too much, ask your butcher to turn some of it into patties, meatballs, or sausage for variety.
Can I meal prep with bulk beef?
Absolutely. Thaw 2-3 lbs of ground beef on Sunday and cook a big batch of bolognese, taco meat, or meatballs to portion out for the week. Brown and freeze chili or stew in individual containers. Pull a roast out on Friday morning and slow-cook it for Saturday dinner. The freezer is your pantry.
What if my family doesn't like a certain cut?
You have options: (1) grind it — any cut can become ground beef. (2) Learn a new preparation — most "disliked" cuts are just cooked wrong. (3) Trade with your split partner or neighbors. (4) Make bone broth from roasts you won't eat. Before your next order, adjust your cut sheet to get more of what you love.
